Southern views: pressed caviar
How incredibly interesting is the concept of pressed caviar? Technically speaking, this compact delicacy is salted mullet roe. It comes in a variety of flavors, but ultimately tastes similar amongst its kind.If you've been following this series of posts, then you know my friend Vivian took us to meet her family in the south. Her elders prepared the freshest pressed caviar, lit a flame and roasted it. We enjoyed the thin slices with hot green tea to cleanse our palette. Roasting times varied ranging from five to seven minutes per piece.After leaving, I actually craved this on my trip back to Korea. I saw a handful of boxes at the duty free shops in the airport, but nothing could taste quite possibly as fresh as this once in a lifetime experience offered.Cheers.
